Jalapeno Potatoes


This is great with barbecue or smoked meats.
 
6   medium red potatoes
1   small bell pepper, slivered
1  small can pimentos, sliced
Salt and pepper to taste
1/2 stick of butter or margarine
1 Tablespoon flour
1   cup milk
1 roll Kraft  jalapeno cheese
 
 
Boil potatoes in their jackets in salted water until tender, but not falling apart.    When cool enough to handle, peel, slice and layer in a buttered casserole with slivered bell pepper and pimento.    Salt and pepper each layer.    Melt butter in a saucepan, add flour and stir until blended.    Gradually add milk, stirring constantly.    Add cheese which has been cubed or grated and cook until melted.    Pour over the potatoes and bake at 350 degrees for about 45 minutes to 1 hour.    Check often.    This serves 6 to 8 people.  
 
I often double this recipe except I use only 8 potatoes but double the rest of the ingredients.   It is a dish you can make the day before and have it ready in the refrigerator to cook.
